As an Indigenous Australian, Clayton started learning about native food when he was four years old, out walking with his aunties and grandmothers. Later after school he started Law at university, but he finally settled on a chef ’s apprenticeship and never looked back, travelling the world, learning from the best and earning himself a Chefs Hat from the Australian Good Food Guide. He has built a career around the use of native Australian ingredients, earned a reputation on the popular ABC TV show Wild Kitchen.
Remy spent years working in mainstream media executive positions nationally and globally, until she found her true calling. Always a lover of fine food and supporter of local business, in 2004 she published her first recipe and food-based book. From there she went on to publish the best selling Byron Bay Cook Book and to establish the Annual Sample Food Festival, one of the largest local food showcases of its kind based in the Byron Bay Shire now in it’s sixth year.
